ABSTRACT |
Mango peel, pulp and seed kernel flour prepared from matured unripe Perlis Sunshine mango were assessed for physicochemical properties such as proximate analysis, total dietary fiber, antioxidant activity and total phenolic content. Thus, Perlis Sun Shine mango peel powder can be added in biscuit formulas as to develop high fiber bakery product and in order to increase the daily fiber intake.
