PRODUCT NAME Development Of Value Added Flour As A New Ingredient From Bambara Groundnut
ABSTRACT One of the food issues that world concern is the food shortage caused by climates changes such as drought and the demand of food is more than food supply. Thus, due to the high nutrients in bambara groundnuts, it has the potential to minimize food and nutritional crises. The bambara groundnuts have the potential for providing a balanced diet in area where animal protein is expensive and the cultivation of other legumes is risky because moisture level are favourable (Kock, 2004). Moreover, bambara groundnut which constitutes complete food stuff is reported to contain protein, carbohydrates and lipid and can be consumed at different stages of maturation (National Research Council, 2006). Considering the above, it has become imperative for food researcher and nutrionists do research and analysis on bambara groundnut to accomplish the demand for protein-rich foods. It had been identified as one of the Future Crop by CFRC is grown in Thailand and Indonesia as cash crop. In Malaysia, the crop has potential as intercrop or relay crop but not grown commercially yet, but the Bambara nuts is a popular sneak food eaten boiled. Fresh nuts are difficult to store and processing it into flour is a good value addition to the crop system. Bambara is a nutritious food that never become as popular as the peanut which has a higher level of protein, by having flour products, it uses can be more diversified, subsequently it will hopefully give a premium price to farmers.
