The Malaysian edible bird nest (EBN) industry is facing problem of rejection from the importer especially China due to the high nitrite and nitrate content in EBN sample. The Chinese government insisted that nitrite should not be present in EBN or its product although the presence of natural nitrite in bird nest is recognized. The presence of nitrite and nitrate in EBN have to comply with standards set by China and should not be more than 30 ppm (DSM, 2011). So, a `Novel technique using sensor has been invented to determine the nitrite and nitrate in edible bird nest (EBN) which are more rapid and fast and also non-destructive.
